Recipe for Artichoke Soup

Ingredients:

– 12 artichokes 

– 1 onion, chopped 

– 6 garlic cloves, minced

– 2 cups peeled and diced potatoes 

– 3 cups water or vegetable broth of your choice 

– 3 tablespoons butter or olive oil 

– Salt and pepper to taste. Optional: 1 bay leaf, lemon juice.

Instructions: 

Clean the artichokes by removing the tough outer leaves until you reach the soft leaves underneath. Cut off the stems and remove the fuzzy choke from each artichoke.

Boil the artichokes in water or broth until tender. You can either use a pressure cooker or an Instant Pot (or any other electric pressure cooker) to do this.

Drain well and transfer to a bowl; set aside.

In a sauce pan, sauté garlic with onions and carrots over medium heat until golden in color, 5 minutes. In the meantime, add diced potatoes and cook for another 2 minutes.

Add the broth or water and the artichokes, salt and pepper to taste.

Let it boil for 10 minutes. You can add bay leaves and lemon juice too.

Before serving, you can use a hand blender or a regular blender to blend it until smooth.

Garnish with some grated cheese or serve plain with bread on the side.

Serve with a salad or some fresh vegetables.

Note: Always wash and clean the artichokes thoroughly before using, as they are often sprayed with pesticides. Use gloves when removing the tough leaves, as they can be prickly. You can add parsley if you want to go even healthier.
